The Hapuku Kitchen Experience - A Day with Chef Fiona Read

Join chef Fiona in her rural cook's kitchen to prepare and enjoy a seasonal feast inspired by the wild Kaikoura landscape, from ingredients you've harvested and foraged from her extensive garden.

The Hapuku Kitchen Experience is an ever-changing feast, focused on using traditional cooking techniques such as fire and fermentation, which follows and celebrates the seasons.  To ensure you’ll be cooking with only the freshest produce available, the menu is created the day prior, after Fiona has wandered through the garden.

The day begins with an introduction to the kitchen and the menu for the day.  This is discussed over a cup of locally roasted coffee or a refreshing drink made from herbs and flowers from the garden.  We’ll then embark on a journey around the Hapuku Kitchen property, foraging in the garden for fruit, vegetables and herbs.  The extensive tour provides plenty of opportunity to discuss Hapuku Kitchen’s gardening philosophy with Fiona and her passion for ensuring the provenance of all the produce used.  You’ll also have the chance to roll up your sleeves and plant something.  Depending on the season this might involve sowing some seeds or planting vegetable seedlings, shrubs or possibly even a tree.

Once you have completed the harvest, collected the eggs, and fed the pigs and cows, you’ll return to the kitchen and as a group, prepare the various dishes that make up the menu.  With help always at hand, you will learn many techniques and tricks on the creation of the dishes of the day.

To finish the day, simply relax and enjoy the feast accompanied with wine or beer from some of Fiona’s favourite Canterbury and Marlborough winemakers and brewers.  Delicious home-made non-alcoholic beverages are also available, such as sparkling elderflower and cucumber.

Join us for dinner celebrating foraged and sustainably farmed produce from the wild environment of Kaikōura, New Zealand, prepared and cooked in our kitchen at the base of the world.

The Supper Club at Hapuku Kitchen offers a unique dining experience in our home, inspired by our natural surroundings.  Our three-course, set menus are a celebration of the season and everything the wild, rugged region has to offer.

Our dining table seats twelve guests and while you're savouring the flavours of Kaikōura, you'll hear stories about how we grow our food, how we forage from the mountains to the sea and the people behind locally sourced ingredients.

We focus on ingredients we have grown ourselves, foraged or sourced from our neighbours.  Everything is made from scratch and the menu is finalised the day prior, based on what is at its absolute best.

Get a group of friends or family together and book the entire table of twelve, or book a seat and meet other people interested in good food and great company.

What is a Supper Club?  

It's a good question.  Supper clubs are places for people to enjoy fine, high-quality food, without formalities. Many supper clubs are hosted by people in their own houses, so it feels as though you're visiting them for dinner, but you're paying them.

A supper club really can be anything, with many taking the form of pop-up concepts and even underground restaurants. Typically there is no choice when it comes to the menu, and the whole thing has a more relaxed, communal feeling when compared to a restaurant.

We are licensed premises and offer a small list of carefully selected wines from Canterbury and Marlborough as well as local beer, gin and our own home-made non-alcoholic sodas.
